  1. Slowed maybe but not significantly.

  2. Not really, the carbs/sugar are still processed at the same (each are different though) rate. The fat in the foods DOES absorb (that is, converts to blood glucose) much more slowly, and will elevate your blood glucose for a much longer period of time.
